From 8 December 2023, all registered food businesses in the tourism, retail, hospitality and catering industries across Australia must appoint a Food Safety Supervisor holding a food safety certificate (that has been issued within the last five years).

The SITSS00069 – Food Safety Supervision Skill Set, will help you meet this requirement.

In addition, the state governments of the ACT, VIC and SA already require Food Safety Supervisors to hold this skill set to work in food businesses, such as delicatessens, market stalls, restaurants, service stations, convenience stores, bakeries, caterers, and takeaway outlets (to name a few).

The SITSS00069 Food Safety Supervision Skill Set consists of two Units of Competency, which are:  

➤ SITXFSA005 Use Hygienic Practices for Food Safety: This unit focuses on teaching learners the fundamental principles and practices of food safety. It covers topics such as personal hygiene, safe food handling, preventing food contamination, maintaining cleanliness in food preparation areas, and implementing hygienic practices throughout the entire food handling process.

➤ SITXFSA006 Participate in Safe Food Handling Practices: This unit builds upon the knowledge gained in the first unit and provides learners with practical skills in safe food handling. To comply with the new Standard 3.2.2A effective from 8th December 2023, food businesses in Australia must adhere to the following requirements:

➤ All Food Handlers and Food Safety Supervisors (FSS) must have completed a food safety training course that aligns with Standard 3.2.2A, or possess appropriate skills and knowledge in food safety.

➤ The designated Food Safety Supervisor (FSS) must hold a valid food safety supervisor certificate. The certificate should have been issued within the immediate preceding period of 5 years.

➤ It is crucial for food businesses to ensure that their staff, including both Food Handlers and FSS, meet these requirements as per the new standard. 

Compliance with these regulations helps to maintain food safety practices and minimise risks associated with food handling.

THIS COURSE IS SUITABLE FOR LEARNERS WHO:

This unit is applicable to all tourism, hospitality, and catering organisations that have permanent or temporary kitchen premises, as well as smaller food preparation businesses.

To obtain the Food Safety Supervisor (FSS) certification, you must complete two units: SITXFSA006 and SITXFSA005. These units are included within a single course.

Food laws require specific food businesses in the hospitality and retail food service sector to appoint at least one trained FSS. The primary purpose of an FSS is to prevent individuals from falling ill due to food poisoning resulting from mishandling and improper food preparation.

The owner of a food business nominates the FSS, who can be the owner, manager, employee (such as a chef), or an external contractor responsible for food service operations. In the case of a small business, it is often most appropriate for the business owner to fulfill the role of the FSS.

A FOOD SAFETY SUPERVISOR IS A PERSON WHO:

To meet the criteria for an eligible Food Safety Supervisor (FSS), the individual must fulfill the following requirements:

Trained to recognise and prevent risks associated with food handling in a retail food business.

Possess a current FSS certificate, which should not be more than five years old.

These criteria are essential to ensure that the designated FSS has the necessary knowledge, skills, and capacity to maintain food safety standards within the organisation.

BUSINESSES MUST APPOINT AT LEAST ONE TRAINED FSS PER PREMISES.

To comply with the legal requirements and promote transparency, businesses should consider the following:

Ensure that the designated Food Safety Supervisor (FSS) holds a valid FSS certificate.

  Keep a copy of the FSS certificate on the premises.

Be prepared to produce the FSS certificate for inspection upon request by an authorized officer.

The Food Authority encourages businesses to display their FSS certificate, making it visible to customers and stakeholders.

By adhering to these guidelines, businesses demonstrate their commitment to food safety and regulatory compliance, building trust with customers and regulatory authorities alike.

✔ In the event of a Not Yet Satisfactory result you will be given feedback and the opportunity to resubmit.

Students will undertake a Pre-Enrolment Review or LLND short test before enrolling to help confirm the proposed course is suitable. It will provide valuable information about an individual's existing skills and knowledge,language, literacy, numeracy and digital skills and whether the course will help in achieving learning and/or employment goals.

ASSESSMENT STAGE 1:

 KNOWLEDGE - MULTIPLE CHOICE & WRITTEN RESPONSE

The course is broken down into short, manageable sections designed to aid your learning.  

✩ Each module assessment comprises of a combination of multiple-choice questions such as drag and drop, fill in the missing word. In addition, there are a number of short answer questions.

✩ All questions must be answered correctly within each module in order to proceed.

✩ Once you have satisfactorily completed Assessment 1 – you will move onto Assessment Stage 2

ASSESSMENT STAGE 2:

SKILLS & KNOWLEDGE - THIRD PARTY OBSERVATION CHECKLIST (TPOC)

✩ Assessment stage 2 requires another party to observe and collect evidence that you are able to perform the required skills and apply the required knowledge.

What is Standard 3.2.2A?

Standard 3.2.2A is a recent addition to the Australia New Zealand Food Standards Code. This change means that from December 8, 2022, new requirements exist for food businesses across all Australian states & territories.

If your business prepares and serves food then this change affects you.

The new requirements need to be met by any business that prepares or serves food in any Australian state and territory. Standard 3.2.2A outlines the need for a food safety management system within a business, by introducing the following three tools:

★ Food Handler Training - Offered by Job Trainer Australia SITXFSA005

★ Food Safety Supervision - Offered by Job Trainer Australia SITSS00069

★ Record Management

The standard has defined what a Food Safety Training Course MUST contain.

A food safety training course means training in food safety that includes training in each of the following: 

a. safe handling of food; and 

b. food contamination; and

The food safety training course must include all of the listed topics.

Who does this impact?

The new requirements need to be met by any business that prepares or serves food in any Australian state and territory. In Australia, food safety laws are enforced at a state and territory level.

No matter which state or territory you operate within, the new requirements of Standard 3.2.2A are more extensive than previous requirements. This means that food businesses need to take action to ensure they remain compliant as the consequences of noncompliance can be serious.

Prior to recent changes, many states and territories had their own special requirements for food handling and record keeping, these included New South Wales, Victoria, Queensland and the Australian Capital Territory.

However, from December 8, 2022, all Australian states and territories must now comply with the requirements outlined in Standard 3.2.2A.

This also means that for the first time, those states and territories that previously had limited requirements, must now follow the new standard. This includes Western Australia, South Australia, Tasmania and the Northern Territory.

What must I do to be ready before December 8?

Every business is different, Standard 3.2.2A has different requirements for different types of food-related activities. The following checklist is a good place to start:

Determine if the Standard applies to you, and which category your business falls into

★ Review your staff’s qualifications. Who needs to train or retrain?

★ Make sure you have a Food Safety Supervisor in every venue as required.

★ Get your current Food Safety Supervisors certified, or make sure their accreditations are up to date.
