STANDARD 3.2.2A β FOOD SAFETY MANAGEMENT TOOLS
This unit provides information on the use of safe food handling practices in food businesses nationwide.
The unit covers Standard 3.2.2A explicitly identified list of topics;
β€ safe handling of food;
β€ food contamination;
β€ cleaning and sanitising of food premises and equipment;
β€ personal hygiene.
Develop a solid understanding of food safety in the workplace
β€ safe handling of food β including temperature control measures for potentially hazardous food and understanding of the temperature danger zone
β€ food contamination β including strategies to keep raw and cooked food
separate, allergen management, food storage, and use of separate utensils and chopping boards
β€ cleaning and sanitising of food premises and equipment β including correct procedures for cleaning then sanitising, using food-safe chemicals, and/or using heat as a sanitiser
β€ personal hygiene β including obligations for sick employees, handwashing, uniforms and grooming of hair, nails, skin, etc.

What is Standard 3.2.2A?
Standard 3.2.2A is a recent addition to the Australia New Zealand Food Standards Code. This change means that from December 8, 2022, new requirements exist for food businesses across all Australian states & territories.
If your business prepares and serves food then this change affects you.
The new requirements need to be met by any business that prepares or serves food in any Australian state and territory. Standard 3.2.2A outlines the need for a food safety management system.

Who does this impact?
The new requirements need to be met by any business that prepares or serves food in any Australian state and territory. In Australia, food safety laws are enforced at a state and territory level.
No matter which state or territory you operate within, the new requirements of Standard 3.2.2A are more extensive than previous requirements. This means that food businesses need to take action to ensure they remain compliant as the consequences of noncompliance can be serious.
Prior to recent changes, many states and territories had their own special requirements for food handling and record keeping, these included New South Wales, Victoria, Queensland and the Australian Capital Territory.
However, from December 8, 2022, all Australian states and territories must now comply with the requirements outlined in Standard 3.2.2A.
This also means that for the first time, those states and territories that previously had limited requirements, must now follow the new standard. This includes Western Australia, South Australia, Tasmania and the Northern Territory.
What must I do to be ready before December 8?
Every business is different, Standard 3.2.2A has different requirements for different types of food-related activities. The following checklist is a good place to start:

Make sure you have a Food Safety Supervisor in every venue as required.

Penalties & Non Compliance
Enforcement of the new standard commences in 2023 and is overseen by local government.
